Apples and gentle spices give this cake an upmarket feel without any effort.

Ingredients

  • Melted butter, to grease
  • 125g butter, cubed
  • 220g caster sugar
  • 225g plain flour
  • 1 tsp bicarbonate of soda
  • ½ tsp mixed spice
  • 425g jar apple sauce

Instructions

  1. Preheat the oven to 180C/350F/gas mark 4. Brush a round tin with melted butter to grease and line it with baking paper.
  2. Using an electric whisk, beat the butter and sugar until light and fluffy.
  3. Sift the flour, bicarbonate of soda and spice together and fold until just combined. Add the apple sauce and fold in.
  4. Spoon the mixture into the tin and smooth the surface. Bake for an hour or until a skewer inserted into the middle of the cake comes out clean.
  5. Cool on a wire rack and cut into slices to serve.
