Ballyfree Turkey Burger Rainbow Salad

Ballyfree Turkey Burger Rainbow Salad. This is also a great recipe for meal-prepping. Simply assemble the salad in a sealable container as above but don’t drizzle with the salad dressing. Rather, pour a small amount of dressing into a small container, then drizzle over the salad just before eating.

Ingredients

  • For the salad
  • 2 Ballyfree Cranberry, Oats & Spinach Turkey Burgers
  • Mixed leaves
  • Peppers, sliced
  • Red onion, sliced
  • Cherry tomatoes, quartered
  • Radish, sliced
  • Cooked quinoa
  • Mixed seeds
  • For the dressing:
  • Juice of 1 lime
  • 80ml olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 tsp salt
  • ½ tsp cracked black pepper

Instructions

  1. Fry or grill the turkey burgers (follow the cooking instructions on the pack) making sure they’re cooked through.
  2. Whisk together all of the dressing ingredients together in a jug or small bowl. Set aside.
  3. To assemble the salad, arrange a few handfuls of mixed leaves on plates and then scatter over sliced peppers, red onion, cherry tomatoes and radish. Sprinkle a few spoonfuls of cooked quinoa over the salad. Place cooked turkey burgers on top of salads then drizzle with salad dressing. Finally, sprinkle with mixed seeds.
