Introduction

Tasty, versatile and easy on the wallet – this is what we call an ideal midweek meal.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 400g sirloin steak, thinly sliced
  • 150g button mushrooms, thinly sliced
  • Small head of broccoli, divided into small florets
  • 1 tbsp plain flour
  • 240ml beef stock
  • 300g egg noodles
  • Handful frozen peas
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce

Method

  • 1. Heat the oil in a frying pan over a medium heat. Add the onion and garlic, cooking until softened. Add the beef and cook for a further ten minutes or until it is browned and cooked through.
  • 2. Add the mushrooms and broccoli and cook for five minutes or so. Add the flour, stirring for a minute to allow it to cook through. Stir in the stock and bring to the boil. Reduce the heat and stir occasionally for ten minutes or until the sauce thickens slightly.
  • 3. While the beef sauce is reducing, cook the noodles according to the packet instructions, drain and refresh in cold water.
  • 4. Add the peas, soy and oyster sauce. Cook, stirring, for a few minutes until the peas are just tender. Toss in the noodles and serve in bowls.
