Ingredients
- 30 chicken wings, cut into the tip and the drumstick
- 5 tbsp plain flour
- For the sauce:
- 1.5 tbsp white vinegar
- 4 tbsp butter, melted
- 1 tsp Worcestershire sauce
- 1 tsp Tabasco sauce
- 6 tbsp hot sauce
- 1 tbsp paprika
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic granules
- 1/4 tsp black pepper
- For Blue Cheese Dip:
- 120ml sour cream
- 50g crumbled blue cheese
- 120ml mayonnaise
- 1 tbsp white wine vinegar or white vinegar
- 1 clove garlic, crushed
- To serve: celery sticks
Method
- 1. Coat the chicken wings in flour and cook in a deep fryer in batches, until crispy and cooked through. The wings will take about 8 minutes a batch.
- 2. To make the wing sauce, heat the vinegar, butter, Worchestershire sauce, Tabasco sauce and all of the dry ingredients. Simmer over a medium heat for five minutes, until all of the ingredients have come together.
- 3. To make the blue cheese sauce, mix together all of the ingredients in a small bowl with a fork, adding a dash of water if it needs to be loosened.
- 4. Smother the crispy wings with sauce and serve with a bowl of blue cheese dip and lots of celery stick on the side.
