Buffalo Wings with Blue Cheese Dip

Ingredients

  • 30 chicken wings, cut into the tip and the drumstick
  • 5 tbsp plain flour
  • For the sauce:
  • 1.5 tbsp white vinegar
  • 4 tbsp butter, melted
  • 1 tsp Worcestershire sauce
  • 1 tsp Tabasco sauce
  • 6 tbsp hot sauce
  • 1 tbsp paprika
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic granules
  • 1/4 tsp black pepper
  • For Blue Cheese Dip:
  • 120ml sour cream
  • 50g crumbled blue cheese
  • 120ml mayonnaise
  • 1 tbsp white wine vinegar or white vinegar
  • 1 clove garlic, crushed
  • To serve: celery sticks

Instructions

  1. Coat the chicken wings in flour and cook in a deep fryer in batches, until crispy and cooked through. The wings will take about 8 minutes a batch.
  2. To make the wing sauce, heat the vinegar, butter, Worchestershire sauce, Tabasco sauce and all of the dry ingredients. Simmer over a medium heat for five minutes, until all of the ingredients have come together.
  3. To make the blue cheese sauce, mix together all of the ingredients in a small bowl with a fork, adding a dash of water if it needs to be loosened.
  4. Smother the crispy wings with sauce and serve with a bowl of blue cheese dip and lots of celery stick on the side.
