Cheese & Mixed Seed Lunch Cookies

Pack into lunchboxes for a delicious treat, packed with protein. Courtesy of Dubliner Cheese, which is available from supermarkets nationwide.

 

 

Ingredients

Instructions

  1. Heat oven to 170oC/325oF/gas mark 3.
  2. Put everything except the seeds and milk into a food processor and whizz for 20 seconds.
  3. Tip out onto your work surface, sprinkle in the seeds and bring the dough together with your hands
  4. Add a few drops of milk to loosen if necessary.
  5. Roll the dough into a log and chill in the fridge for 30mins.
  6. Remove from fridge and slice into 1cm thick rounds.
  7. Place on a lined or lightly buttered baking and bake for 10-15 minutes until golden brown.
  8. Remove from the oven and transfer the cookies to a wire rack to cool.
  9. Enjoy in your lunchbox or as a tasty snack anytime.
