Chicory Salad with Anchovy Dressing

Thank you for your rating!

This superlight lunch option is great served with grilled fish or chicken. Courtesy of food blogger Rowena Dumlao-Giardina https://www.apronandsneakers.com/2011/11/chicory-salad-with-anchovy-dressing.html

Ingredients

  • 250g chicory, cleaned
  • 6 anchovy fillets, preserved in oil
  • 1 clove garlic
  • extra virgin olive oil
  • 2 tbsp white wine vinegar
  • pepper

Instructions

  1. To prepare the chicory, take the tender shoots from the head. With a small knife, cut away the hardest part of the shoot located at the end. Cut in half lengthwise and continue to make 4 or 5 strips from each half, depending on the thickness.
  2. Put the chicory strips in a big bowl of water with ice for at least an hour. The coldness of the water will make the strips curl and take away some of the bitterness of the vegetable.
  3. Use a mortar & pestle to pound the garlic, anchovies and oil together. When the mixture becomes liquid, mix in the vinegar and pepper. Pour on the drained and dried salad.
  4. Serve immediately.
