Introduction
A blend of earthy spices and mild chilli makes this dish an ideal midweek pick-me-up. It tastes even better the next day!
Ingredients
- 2 tbsp olive oil
- 1 onion, finely diced
- 2 garlic cloves, crushed
- 1 red chilli, de-seeded and finely chopped
- 500g lean minced beef
- 1 tin chopped tomatoes
- 3 tbsp tomato puree
- 1 tbsp tomato ketchup
- 250ml beef stock
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper
- 1 tbsp worcestershire sauce
- 1 tin kidney beans
- 1 lime
- To serve:
- 2 tbsp coriander leaves, chopped
- basmati rice
Method
- 1. Heat the olive oil in a large an and fry onion for 1 minute and then add garlic and chilli for another minute. Then add the beef and brown for approx 4- 5 minutes.
- 2. Add the chopped tomatoes, tomato puree, tomato ketchup, beef stock, ground coriander, cumin, cayenne pepper and worcestershire sauce. Cover with a lid and simmer for 55 minutes. Stir throughout cooking.
- 3. Once reduced add the kidney beans juice of ½ lime.
- 4. Serve with basmati rice, garnished with coriander leaves and a wedge of lime.
