Introduction
Simple, light and perfect with a cup of tea, we love these for a sneaky breakfast treat.
Ingredients
- 250g self raising flour
- 1 tsp baking powder
- 115g caster sugar
- 75g dried cherries, chopped
- 100g plain chocolate, chopped
- 125ml milk
- 75ml sunflower oil
- 1 egg
- Icing sugar
- Dried cherries, to top
TO SERVE:
Method
- 1. Preheat the oven to 180C/350F/gas mark 4. Line a muffin tin with 8 cases.
- 2. Sift the flour and baking powder into a large bowl. Add the sugar and stir in the cherries and chocolate.
- 3. In a small bowl combine the milk, oil and egg and whisk until blended. Add to the dry ingredients and stir until just combined. Don’t over mix the mixture should be lumpy and thick. If it looks too dry, add an extra splash of milk.
- 4. Spoon into the muffin cases and bake for 20-25 minutes, until risen and firm to the touch. Cool on a baking rack and serve warm.
- 5. Before serving, dust with icing sugar and top with a dried cherry.
