Crispy Chicken with Melting Mozzarella

This crispy cheesy chicken is perfectly paired with roast tomatoes to offset it’s rich interior

Ingredients

  • 2 tsp thyme, chopped
  • 2 garlic cloves, crushed
  • 1 ball mozzarella, chopped
  • 3 tbsp parsley, chopped
  • Salt & pepper
  • 4 chicken breasts
  • 50g fresh breadcrumbs
  • 20g Parmesan, grated
  • 100g plain flour
  • 1 egg, beaten
  • Spray oil
  • 250g cherry tomatoes on the vine

Instructions

  1. Preheat oven to 180°C/350°F/gas mark 4.
  2. Combine thyme, garlic, Mozarella and 1 tbs parsley, and season.
  3. Cut a deep pocket lengthways in the thickest part of each fillet and fill with the cheese mixture. Secure with toothpicks.
  4. Combine breadcrumbs, parmesan and remaining parsley, then season. Place egg in a shallow bowl. Dip chicken first in flour, then in egg, then crumbs and place in a greased baking dish. Spritz the chicken with spray oil and bake for 45 minutes, until the chicken is just cooked.
  5. Add tomatoes and bake for 5 minutes or until starting to soften and chicken is cooked.
  6. Remove toothpicks, and serve!
