Easy Chicken Fried Rice

This recipe is ideal for clearing out your fridge at the end of the week – feel free to mix and match ingredients with what you have in your fridge.

Ingredients

  • 2 tbsp vegetable oil
  • 200g white or brown rice, cooked and cooled
  • 2 eggs, beaten
  • 100g cooked chicken, shredded
  • 5 scallions, finely sliced
  • 60g frozen peas
  • 1 tbsp soy sauce, plus extra to serve
  • 1 tsp sesame oil

Instructions

  1. In a large, heavy based frying pan or wok, heat the vegetable oil over a high heat. Add the rice and the egg, stir-frying for about 3 minutes, until the egg and rice is well combined.
  2. Stir in the chicken, scallions and frozen peas, and stir-fry for a minute or two, until the chicken warms through and the peas are cooked.
  3. Stir in the soy sauce and sesame oil, give the pan a good shake and serve in bowls with extra soy sauce on the side.
