Ingredients
- 1 tin Batchelors Ballymaloe Relish Baked Beans
- 200g feta cheese
- 4 eggs
- Salt & pepper
- Chilli oil, to taste
- 1 avocado, sliced
- 4 tortillas
- Pickled red onion
- Fresh coriander
TO SERVE:
Method
- 1. Empty the tin of Batchelors Ballymaloe Relish Baked Beans into a small saucepan and place it over medium heat. Stir occasionally until beans are hot and steaming.
- 2. While beans are heating, place 2 very large frying pans over medium-high heat with a drizzle of light olive oil.
- 3. Once oil is hot, crumble 50g of the feta in a ring shape on one side of the pan, then another ring with another 50g feta on the other side of the pan, and do the same in the second frying pan.
- 4. Reduce heat to medium then crack an egg into the centre of each feta ring, season lightly with salt and pepper. Drizzle some chilli oil over each feta egg then cover the pans with lids, or you can use tinfoil.
- 5. Cook until the eggs are done to your liking, 2-3 minutes for a runny yolk.
- 6. While the eggs are cooking, heat the tortillas in a dry pan or in the microwave, following the package instructions. Keep tortillas warm between 2 clean kitchen towels until ready to serve.
- 7. To assemble, place tortillas on plates then spoon 2 generous spoons of the hot Batchelors Ballymaloe Relish Baked Beans onto each warm tortilla then arrange ¼ of the avocado slices on the beans. Place a feta egg on top and finish off with some pickled red onion and a scattering of torn coriander leaves. Enjoy immediately.
