Introduction
Top Irish food writer Máirín UíChomain shares her recipe for the traditional baguette.
Ingredients
- 225g plain flour
- 14g yeast
- 1 egg
- 15g butter
- 1/2tsp sugar
- 1/2tsp salt
- 118ml milk
Method
- 1. Sift together flour and salt.
- 2. Rub in the butter and put aside on top of cooker to warm.
- 3. Cream together the yeast and sugar and add to warmed milk and beaten egg. Add the liquid to the flour, beat and knead thoroughly.
- 4. Cover and stand in a warm place.
- 5. Allow to rise for one hour.
- 6. Preheat the oven to 180°C/350°F/gas mark 4.
- 7. Form into rolls or plaits. Put onto a greased proof shelf for a further 10 minutes.
- 8. Take out and brush with a beaten egg and bake for a further 15 minutes in the oven.
