Introduction

This brack is a great addition to any afternoon tea. Slice and slather with butter for a real treat

Ingredients

  • 125g butter
  • 350g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 3-4 tsp ground ginger
  • 100g light muscovado sugar
  • 225g golden syrup
  • 1 egg
  • 75ml milk

Method

  • 1. Grease and line a 900g loaf tin. Preheat the oven to 160C/310F/gas mark 3.
  • 2. Sift together the flour, baking powder, bicarbonate of soda and ground ginger. Set aside.
  • 3. Melt the butter, sugar and golden syrup in a small saucepan. Set aside to cool slightly.
  • 4. Beat the egg and milk together. Stir the cooled syrup into the dry ingredients, followed by the milk and beat well. Spoon into the tin and bake for about 1 ¼ hours, until just firm to the touch. Cool on a wire rack.
