Introduction
This brack is a great addition to any afternoon tea. Slice and slather with butter for a real treat
Ingredients
- 125g butter
- 350g plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 3-4 tsp ground ginger
- 100g light muscovado sugar
- 225g golden syrup
- 1 egg
- 75ml milk
Method
- 1. Grease and line a 900g loaf tin. Preheat the oven to 160C/310F/gas mark 3.
- 2. Sift together the flour, baking powder, bicarbonate of soda and ground ginger. Set aside.
- 3. Melt the butter, sugar and golden syrup in a small saucepan. Set aside to cool slightly.
- 4. Beat the egg and milk together. Stir the cooled syrup into the dry ingredients, followed by the milk and beat well. Spoon into the tin and bake for about 1 ¼ hours, until just firm to the touch. Cool on a wire rack.
