Introduction

Ingredients

  • 240ml Guinness
  • 180ml olive oil (canola oil will also work)
  • 2 eggs
  • 160ml low fat plain yogurt
  • 300g sugar
  • 80g unsweetened cocoa powder
  • 300g whole wheat flour
  • 1.5 tsp bicarbonate of soda
  • FOR THE TOPPING:
  • 360ml double cream
  • 60g icing sugar
  • 4-6 tbsp crème de cacao (Baileys will also work well)

Method

  • 1. Preheat oven to 350 F (180 C). Line cupcake pan with cupcake liners and set aside.
  • 2. In a bowl, with a whisk, mix first 5 ingredients. Add flour, cocoa powder and bicarbonate of sodaa and combine. Fill cupcake liners 3/4 of the way and bake for 22-28 minutes.
  • 3. For the topping, whip the double cream and sugar to a bowl until soft peaks form. Add crème de cacao and combine for extra 5 seconds.
