


Honey Soy Chicken Stir Fry

Introduction
Strap street-style noodles, ready in minutes with this speedy and delicious meal.
Ingredients
- 500g chicken thigh fillets, trimmed and cut into thin strips
- 60ml soy sauce
- 2 tbsp honey
- 1 tsp sweet chilli sauce
- 2 tsp vegetable oil
- 3 garlic cloves, crushed
- 1 inch fresh ginger, grated
- 1 stir fry vegetable pack
Method
- 1. Combine the chicken, soy sauce, honey and sweet chilli sauce in a bowl. Leave to marinate for 5 minutes, but longer if you have time.
- 2. Drain the chicken and reserve the marinade. Heat half the oil in a large wok or frying pan over a high heat. Add half the chicken and stir fry for 3-4 minutes, until cooked through. Remove from the wok and repeat with the remaining chicken.
- 3. Add the garlic, ginger and vegetables and stir fry for another 2 minutes before adding the scallions and cooking for a minute.
- 4. Add the noodles and reserved marinade and toss. Cover and cook for 2 minutes, until the noodles are softened. Add a little water if they begin to stick. Remove the lid and return the chicken to the wok. Toss well until heated through and serve in bowls.
