Lamb Shanks with Red Wine & Rosemary

Soft, melting meat in a rich sauce – this is ultimate slow cooker food.
Ingredients
- 4 lamb shanks
- 35g flour
- 2 onions, peeled and sliced
- 4 stalks rosemary, chopped
- 5 cloves garlic, sliced
- 500ml beef stock
- 125ml red wine
- Mashed potatoes
- Steamed greens
TO SERVE:
Method
- 1. Dust the lamb shanks in the seasoned flour, shaking off any excess. Brown the shanks in a dash of oil in a heavy-based frying pan. Transfer to a casserole dish and preheat the oven to 170C/325F/gas mark 3.
- 2. Add a dash more oil to the pan and brown the onions well. Add the rosemary and garlic and toss in the heat until fragrant.
- 3. Add the stock and wine, stirring to lift any sediment from the bottom of the pan. Bring to the boil before pouring over the lamb shanks and cover with the lid.
- 4. Cook for 2 hours in the oven, and serve with steamed greens and mashed potato.
