


Lamb Skewers

Introduction
This is a delicious recipe that is perfect for BBQ.
Ingredients
- 750g lamb steak, cubed
- 1 red pepper cut into chunks
- 1 green pepper cut into chunks
- 100g mushrooms
- 1 red onion, cut into wedges
- Salt and freshly-ground black pepper
- 3 garlic cloves
- 2 tsp oregano
- 50ml Greek-style natural yoghurt
- 2 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- Grated rind and juice of 1 lemon
- 185ml Greek-style natural yoghurt
- Half fresh cucumber diced
- 1 tbsp fresh coriander, chopped
- 1 tbsp fresh mint, chopped
- Zest of 1 lemon
- 2 garlic cloves, crushed
FOR THE MARINADE:
FOR THE MINT AND GARLIC YOGHURT DRESSING:
Method
- 1. Mix all of the marinade ingredients in a casserole dish. Add the cubed lamb and coat it completely with marinade. Cover and leave in fridge for a few hours or ideally overnight.
- 2. Soak 8-10 wooden skewers in water in advance to prevent burning during cooking process or use metal skewers instead.
- 3. Thread the lamb cubes, peppers, mushrooms and red onion onto the skewers, brush with olive oil and season. Cook for 3-4 minutes on each side until lightly charred and cooked to your taste.
- 4. To make the Mint and Garlic Yoghurt Dressing, stir together all the ingredients and season to taste. Drizzle a little dressing over each lamb skewer and serve the rest on the side.
