Introduction

This is a delicious recipe that is perfect for BBQ.

Ingredients

  • 750g lamb steak, cubed
  • 1 red pepper cut into chunks
  • 1 green pepper cut into chunks
  • 100g mushrooms
  • 1 red onion, cut into wedges
  • Salt and freshly-ground black pepper
  • 3 garlic cloves
  • 2 tsp oregano
  • FOR THE MARINADE:
  • 50ml Greek-style natural yoghurt
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Grated rind and juice of 1 lemon
  • FOR THE MINT AND GARLIC YOGHURT DRESSING:
  • 185ml Greek-style natural yoghurt
  • Half fresh cucumber diced
  • 1 tbsp fresh coriander, chopped
  • 1 tbsp fresh mint, chopped
  • Zest of 1 lemon
  • 2 garlic cloves, crushed

Method

  • 1. Mix all of the marinade ingredients in a casserole dish. Add the cubed lamb and coat it completely with marinade. Cover and leave in fridge for a few hours or ideally overnight.
  • 2. Soak 8-10 wooden skewers in water in advance to prevent burning during cooking process or use metal skewers instead.
  • 3. Thread the lamb cubes, peppers, mushrooms and red onion onto the skewers, brush with olive oil and season. Cook for 3-4 minutes on each side until lightly charred and cooked to your taste.
  • 4. To make the Mint and Garlic Yoghurt Dressing, stir together all the ingredients and season to taste. Drizzle a little dressing over each lamb skewer and serve the rest on the side.
