


Lamb Souvlaki

Introduction
Traditionally served streetside in Greece, take the holiday home with you by serving this yummy kebab to the family tonight.
Ingredients
- 400g lean lamb steak, sliced
- 1 onion, peeled and sliced
- 3 garlic cloves, crushed
- 3 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- ½ ground cinnamon
- Pitta Bread
- Iceberg lettuce, shredded
- Tomato, sliced
- Tzatziki
TO SERVE:
Method
- 1. Put the onion, garlic and olive oil in a food processor and blitz until blended to a paste. Add the cumin, coriander, paprika and cinnamon and pulse to combine.
- 2. Spread the paste over the lamb steaks and toss well to combine. Cover and refrigerate for half an hour or overnight if possible.
- 3. Heat a frying pan to high and fry the lamb in batches, ensuring that it browns and caramelises on all sides. Alternatively cook on a BBQ.
- 4. Stuff the lamb in toasted pitta pockets with lettuce, tomato and tzatziki.
