Ingredients

  • 450g fresh asparagus
  • 55g Flora pro.activ
  • Zest and juice of 1 lime
  • 1/2 tsp coriander seeds, crushed
  • A little salt and black pepper
  • 55g ready made breadcrumbs, optional
  • Fresh coriander to garnish

Method

  • 1. Wash the asparagus and snap off the woody end. Steam over simmering water for 5-6 minutes.
  • 2. Meanwhile blend the Flora pro.activ with the lime zest and juice and coriander seeds. Season with a little salt and pepper.
  • 3. When the asparagus is cooked, drain and toss with the flavoured spread. Sprinkle with the crunchy breadcrumbs if wished and garnish with fresh coriander.
