Ingredients
- 450g fresh asparagus
- 55g Flora pro.activ
- Zest and juice of 1 lime
- 1/2 tsp coriander seeds, crushed
- A little salt and black pepper
- 55g ready made breadcrumbs, optional
- Fresh coriander to garnish
Method
- 1. Wash the asparagus and snap off the woody end. Steam over simmering water for 5-6 minutes.
- 2. Meanwhile blend the Flora pro.activ with the lime zest and juice and coriander seeds. Season with a little salt and pepper.
- 3. When the asparagus is cooked, drain and toss with the flavoured spread. Sprinkle with the crunchy breadcrumbs if wished and garnish with fresh coriander.
