Introduction

Siúcra’s Moroccan chicken is succulent and delicious, and perfect for chasing away any January blues.

Ingredients

  • 4 chicken fillets
  • Marinade
  • 150ml freshly squeezed lemon juice
  • 50ml olive oil
  • 2 tbsp Siúcra Rich Dark Brown sugar
  • 1 tsp fresh ginger, finely grated
  • 2 tsp Ras Al Hanout spice blend

Method

  • 1. For the marinade, mix the lemon juice, olive oil, brown sugar, ginger and spice seasoning together in a strong plastic bag. Add the chicken fillets and tie the bag closed. Shake and refrigerate for 1 hour.
  • 2. Remove contents from plastic bag and grill until the meat is cooked through
  • 3. Serve with a cucumber salad and tabbouleh.
