Introduction

Dinner is ready in minutes with this super tasty lean lamb stir fry.

Ingredients

  • 400g lamb steak, cut into strips
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 1 pepper, sliced
  • 3 cloves garlic, crushed
  • 1 chilli, chopped into thin strips
  • 150g broccoli, cut into small florets
  • 2 tbsp water
  • 2 tbsp soy sauce
  • TO SERVE:
  • Basmati Rice

Method

  • 1. Coat the lamb steak in 1 tablespoon of olive oil.
  • 2. Heat a large frying pan or wok over a high heat and fry the lamb in batches, removing to a plate when just cooked through.
  • 3. Heat the remaining oil and add the onion, pepper, garlic and chilli and stir-fry for 2 minutes. Add the broccoli and water, cover and steam for a further 2 minutes. Return the lamb to the pan with the soy sauce and bubble for 3 minutes, until the lamb is heated through and the sauce has reduced slightly.
  • 4. Serve with basmati rice.
