Spicy Lamb Stir-fry

Introduction
Dinner is ready in minutes with this super tasty lean lamb stir fry.
Ingredients
- 400g lamb steak, cut into strips
- 2 tbsp olive oil
- 1 onion, sliced
- 1 pepper, sliced
- 3 cloves garlic, crushed
- 1 chilli, chopped into thin strips
- 150g broccoli, cut into small florets
- 2 tbsp water
- 2 tbsp soy sauce
- Basmati Rice
TO SERVE:
Method
- 1. Coat the lamb steak in 1 tablespoon of olive oil.
- 2. Heat a large frying pan or wok over a high heat and fry the lamb in batches, removing to a plate when just cooked through.
- 3. Heat the remaining oil and add the onion, pepper, garlic and chilli and stir-fry for 2 minutes. Add the broccoli and water, cover and steam for a further 2 minutes. Return the lamb to the pan with the soy sauce and bubble for 3 minutes, until the lamb is heated through and the sauce has reduced slightly.
- 4. Serve with basmati rice.
