Introduction

A great healthy soup recipe from the Coeliac Society of Ireland

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 1 inch piece of fresh root ginger peeled and finely chopped
  • 100g red lentils
  • 1 tbsp tomato puree
  • 1 tsp ground cumin
  • 1 litre vegetable or chicken stock
  • salt & pepper
  • TO SERVE:
  • Natural yogurt and parsley to garnish

Method

  • 1. Cook the onion in the oil until soft. Stir in garlic, ginger and cumin, then add tomatoes and lentils.
  • 2. Cook on a slow heat for 4 minutes. Stir in the stock and tomato puree, bring to the boil and then lower the heat and let simmer until the lentils are soft. This will take about 30 minutes.
  • 3. Season to taste. Purée the soup until smooth, return to the pot and heat gently before serving.
  • 4. Garnish with the yogurt and parsley on top.
