Introduction
A great healthy soup recipe from the Coeliac Society of Ireland
Ingredients
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 1 inch piece of fresh root ginger peeled and finely chopped
- 100g red lentils
- 1 tbsp tomato puree
- 1 tsp ground cumin
- 1 litre vegetable or chicken stock
- salt & pepper
- Natural yogurt and parsley to garnish
TO SERVE:
Method
- 1. Cook the onion in the oil until soft. Stir in garlic, ginger and cumin, then add tomatoes and lentils.
- 2. Cook on a slow heat for 4 minutes. Stir in the stock and tomato puree, bring to the boil and then lower the heat and let simmer until the lentils are soft. This will take about 30 minutes.
- 3. Season to taste. Purée the soup until smooth, return to the pot and heat gently before serving.
- 4. Garnish with the yogurt and parsley on top.
