Tomato & Lentil Soup

A great healthy soup recipe from the Coeliac Society of Ireland

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 1 inch piece of fresh root ginger peeled and finely chopped
  • 100g red lentils
  • 1 tbsp tomato puree
  • 1 tsp ground cumin
  • 1 litre vegetable or chicken stock
  • salt & pepper
  • To serve:
  • Natural yogurt and parsley to garnish

Instructions

  1. Cook the onion in the oil until soft. Stir in garlic, ginger and cumin, then add tomatoes and lentils.
  2. Cook on a slow heat for 4 minutes. Stir in the stock and tomato puree, bring to the boil and then lower the heat and let simmer until the lentils are soft. This will take about 30 minutes.
  3. Season to taste. Purée the soup until smooth, return to the pot and heat gently before serving.
  4. Garnish with the yogurt and parsley on top.
