Ingredients
1 tbsp vegetable oil
1 onion, finely chopped
1 garlic clove, crushed
1 inch piece of fresh root ginger peeled and finely chopped
100g red lentils
1 tbsp tomato puree
1 tsp ground cumin
1 litre vegetable or chicken stock
salt & pepper
To serve:
Natural yogurt and parsley to garnish
Instructions
Cook the onion in the oil until soft. Stir in garlic, ginger and cumin, then add tomatoes and lentils.
Cook on a slow heat for 4 minutes. Stir in the stock and tomato puree, bring to the boil and then lower the heat and let simmer until the lentils are soft. This will take about 30 minutes.
