

Warm pancakes with Summer Berries

Introduction
A great breakfast recipe.
Ingredients
- 100g plain flour
- Pinch of salt
- 2 tbsp sugar
- 300ml milk
- 100g strawberries
- 100g blueberries
- 100g raspberries
- 4 tbsp honey
Method
- 1. To make the pancakes, add the flour, salt, milk and egg into a food processor and mix for 1 minute or until mixture is smooth.
- 2. Make sure to leave the batter for a minimum of 30 minutes.
- 3. Lightly grease a frying pan with sunflower oil. Keep the pan at a medium heat and then spoon on the batter. Make them as think or thick as you like.
- 4. Cook for 1 minute and then flip over and cook for a further minute or until the batter is a light golden colour.
- 5. Wash and dry the berries making sure to remove any stalks, squeeze over some lemon juice and sprinkle with a dusting of caster sugar.
- 6. Arrange in the pancake and serve with honey.
