Warm pancakes with Summer Berries

A great breakfast recipe.

Ingredients

  • 100g plain flour
  • Pinch of salt
  • 2 tbsp sugar
  • 300ml milk
  • 100g strawberries
  • 100g blueberries
  • 100g raspberries
  • 4 tbsp honey

Instructions

  1. To make the pancakes, add the flour, salt, milk and egg into a food processor and mix for 1 minute or until mixture is smooth.
  2. Make sure to leave the batter for a minimum of 30 minutes.
  3. Lightly grease a frying pan with sunflower oil. Keep the pan at a medium heat and then spoon on the batter. Make them as think or thick as you like.
  4. Cook for 1 minute and then flip over and cook for a further minute or until the batter is a light golden colour.
  5. Wash and dry the berries making sure to remove any stalks, squeeze over some lemon juice and sprinkle with a dusting of caster sugar.
  6. Arrange in the pancake and serve with honey.
