Introduction

Ingredients
- 150g tagliatelle
- 180g Burren smoked Salmon of Knowledge
- 1 medium sized leek
- 2 Tbsp crème fraiche
- 1 tbsp lemon juice
- salt and pepper
- 2 tbsp fresh dill, finely chopped
Method
- 1. Cook the pasta according to the packet instructions.
- 2. Meanwhile, slice the leek finely and fry over a gentle heat until it is soft and almost transparent.
- 3. Take the leek off the heat and add the salmon strips, stirring gently. Fold in the crème fraiche. Season with salt and pepper and a squeeze of lemon juice.
- 4. Fold through the pasta and serve with a scattering of dill.
