Introduction

Ingredients

  • 150g tagliatelle
  • 180g Burren smoked Salmon of Knowledge
  • 1 medium sized leek
  • 2 Tbsp crème fraiche
  • 1 tbsp lemon juice
  • salt and pepper
  • 2 tbsp fresh dill, finely chopped

Method

  • 1. Cook the pasta according to the packet instructions.
  • 2. Meanwhile, slice the leek finely and fry over a gentle heat until it is soft and almost transparent.
  • 3. Take the leek off the heat and add the salmon strips, stirring gently. Fold in the crème fraiche. Season with salt and pepper and a squeeze of lemon juice.
  • 4. Fold through the pasta and serve with a scattering of dill.
