Birgitta’s Smoked Salmon Tagliatelle

Ingredients

  • 150g tagliatelle
  • 180g Burren smoked Salmon of Knowledge
  • 1 medium sized leek
  • 2 Tbsp crème fraiche
  • 1 tbsp lemon juice
  • salt and pepper
  • 2 tbsp fresh dill, finely chopped

Instructions

  1. Cook the pasta according to the packet instructions.
  2. Meanwhile, slice the leek finely and fry over a gentle heat until it is soft and almost transparent.
  3. Take the leek off the heat and add the salmon strips, stirring gently. Fold in the crème fraiche. Season with salt and pepper and a squeeze of lemon juice.
  4. Fold through the pasta and serve with a scattering of dill.
