Ingredients

  • 1tbsp olive oil
  • 50g streaky bacon, diced
  • 1 red pepper, de-seeded and finely chopped
  • 1 onion, finely chopped
  • 1cloves garlic, crushed
  • 2 handfuls baby leaf spinach, roughly chopped
  • 8 eggs
  • 2tbsp fresh basil, chopped
  • salt and pepper
  • 75g goat's cheese, crumbled

Method

  • 1. Heat a large non-stick pan and preheat your grill to high.
  • 2. Add the oil and fry the bacon, peppers and onion until the bacon is browned and the vegetables are starting to soften.Add the garlic and fry for a minute or two. Stir in the spinach and remove from the heat.
  • 3. Beat the eggs in a large bowl with the basil and seasoning. Add the bacon mixture to the eggs, stir well.
  • 4. Reheat the pan, pour the mixture into the pan and over a medium heat cook until just set. Crumble on the goats' cheese and place under the grill until the top of the fritatta sets and becomes golden brown.
