A simple omelette is fit to satisfy hunger in any circumstance; whether for breakfast, quick lunch, or for dinner when you’re too tired to cook something more elaborate. What’s more, the options are endless when it comes to fillings. This recipe is a basic cheese omelette, but feel free to add whatever you like to this eggy wonder; cooked bacon or ham, sautéed mushrooms, peppers, chilli, spinach, whatever other cheese you have on hand, or even just some simple herbs. Increase or decrease the number of eggs depending on your level of hunger!

Ingredients

  • 3 eggs
  • Salt & pepper
  • Olive oil
  • Knob of butter
  • Handful grated cheese of choice

Instructions

  1. Heat a medium sized non-stick frying pan over medium-to-medium low heat. Once hot, add a drizzle of oil and add the butter.
  2. While butter is melting, beat the eggs with a pinch of salt and some black pepper in a small bowl.
  3. When butter starts to foam, pour the beaten eggs into the pan, tilting the pan so that the egg spreads all over the surface.
  4. From time to time, use a spatula to scrape the egg from the sides, tilting the pan so that the uncooked egg fills the scraped space. Do this until the egg is mostly set on top.
  5. Sprinkle over the cheese (and other fillings of your choice) then fold over the omelette in half with your spatula. Cook for further 1-2 minutes so that the cheese is melted, then slide the omelette from the pan onto a plate. Garnish with a bit more salt & pepper, fresh herbs or sauce of your choice (hot sauce, salsa, tomato relish, etc.)
