Cajun Chicken Burger with Avocado Salsa

Ingredients
- 2 chicken breasts
- 3 heaped tsp Cajun seasoning
- 2 tbsp olive oil
- 1 large ripe avocado
- 2 tbsp coriander, chopped
- Juice of half a lime
- Baby salad leaves
- Burger buns
Method
- 1. Cut the chicken breasts in half horizontally to form 4 thin fillets. Sprinkle with Cajun seasoning and the olive oil and rub into the chicken. Leave to marinate for 20 minutes, longer if possible.
- 2. Fry or bbq the chicken for 5 minutes a side or until cooked through. Chop the avocado into rough chunks and combine with the coriander and lime juice and a good sprinkling of salt.
- 3. Top the buns with salad leaves, then the chicken and top with a tumble of avocado salsa.
