Cajun Chicken Burger with Avocado Salsa

Ingredients

  • 2 chicken breasts
  • 3 heaped tsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 large ripe avocado
  • 2 tbsp coriander, chopped
  • Juice of half a lime
  • Baby salad leaves
  • Burger buns

Instructions

  1. Cut the chicken breasts in half horizontally to form 4 thin fillets. Sprinkle with Cajun seasoning and the olive oil and rub into the chicken. Leave to marinate for 20 minutes, longer if possible.
  2. Fry or bbq the chicken for 5 minutes a side or until cooked through. Chop the avocado into rough chunks and combine with the coriander and lime juice and a good sprinkling of salt.
  3. Top the buns with salad leaves, then the chicken and top with a tumble of avocado salsa.
