Introduction

A great quick and easy recipe perfect for lunch or dinner.      

Ingredients

  • 500g penne pasta
  • 1 tsp olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 1 tin cherry tomatoes
  • 1/2 tsp brown sugar
  • 1 tbsp lemon juice
  • 3 tbsp Mascarpone
  • Basil leaves
  • salt and pepper
  • Parmesan

Method

  • 1. Cook the pasta according to the packet instructions.
  • 2. In the meantime, gently fry the onion in a little olive oil for 2 minutes ensuring they don’t brown. Then, add garlic cook for a further 2 minutes.
  • 3. Add in the tin of tomatoes, brown sugar and lemon juice. Cook for 3 minutes. If some tomatoes are still whole, crush them slightly.
  • 4. Add the Mascarpone and stir through. Strain the pasta and toss through the tomato sauce.
  • 5. Season with salt and pepper. Divide into bowls and garnish with basil leaves and grated parmesan.
