Creamy Tomato Penne Pasta

Introduction
A great quick and easy recipe perfect for lunch or dinner.
Ingredients
- 500g penne pasta
- 1 tsp olive oil
- 1 onion, finely diced
- 2 garlic cloves, crushed
- 1 tin cherry tomatoes
- 1/2 tsp brown sugar
- 1 tbsp lemon juice
- 3 tbsp Mascarpone
- Basil leaves
- salt and pepper
- Parmesan
Method
- 1. Cook the pasta according to the packet instructions.
- 2. In the meantime, gently fry the onion in a little olive oil for 2 minutes ensuring they don’t brown. Then, add garlic cook for a further 2 minutes.
- 3. Add in the tin of tomatoes, brown sugar and lemon juice. Cook for 3 minutes. If some tomatoes are still whole, crush them slightly.
- 4. Add the Mascarpone and stir through. Strain the pasta and toss through the tomato sauce.
- 5. Season with salt and pepper. Divide into bowls and garnish with basil leaves and grated parmesan.
