Gluten-Free Pasta Nicoise Salad

A delicious, quick and healthy Gluten Free recipe from Kelkin, providing wholesome, healthy foods since 1976.

Ingredients

  • 150g Kelkin gluten free penne pasta
  • 1 tin of tuna in brine, drained
  • 4-5 anchovies
  • 1 hard-boiled egg cut into 4
  • handful of steamed green beans
  • 1 green pepper, sliced
  • 30g black olives
  • To serve:
  • French dressing

Instructions

  1. Cook the gluten free pasta according to the packet instructions, and then add a little drizzle of olive oil.
  2. While the pasta is cooking prepare your vegetables. Drain the tuna and olives.
  3. Once the pasta, has cooled mix in the tuna, green peppers, green beans and black olives.
  4. Then divide the mixture between two bowls. Place the anchovies and egg on top of the pasta salads and serve with salad dressing.
