

Mexican Bean Burgers

Ingredients
- 1 tsp olive oil
- ½ red onion, finely diced
- 2 cloves garlic, crushed
- 2 scallions, finely diced
- 1 red chilli, finely diced
- 2 tsp Mexican spice mix
- 1 x 400g tin mixed beans
- 1 egg, beaten
- 50g breadcrumbs
- 2 tbsp coriander leaves, chopped
- Juice ½ lime
- 80g halloumi, cut into four slices
- Burger bun
- Rocket leaves
- Tomato, sliced
TO SERVE:
Method
- 1. Heat the oil in a pan and cook the onion, garlic, scallion, Mexican spice mix and chilli until softened. Cool.
- 2. Add the beans and roughly mash. Add the egg, breadcrumbs, coriander and lime juice and mix to combine.
- 3. Wet hands and form into four large patties. Chill for 20 minutes to firm up.
- 4. Heat the grill to medium. Fry the burgers on each side for five minutes until golden brown, top with the halloumi slices and pop under the grill for a minute or two.
- 5. Serve on buns piled with rocket and sliced tomato.
