Preheat the oven to 180C/gas mark 4 or fire up the barbeque. Using your hands, squeeze the sausage meat out of the casings and mush together with the fennel and lemon zest. Shape into four patties.
If baking, bake for 25-30 minutes, if barbequing, cook over a medium flame for ten minutes, or until cooked through. Serve piled high with slaw and baby spinach.
