Preheat the oven to 170C/325F/gas mark 3. Put the plum sauce, sugar, oyster sauce, garlic, ginger and water in a small saucepan and heat to combine, stirring well.
Place the ribs in a large baking dish and pour over the sauce. Cover with tin foil and cook for 1 hour. Turn the heat up to 200C/400F/gas mark 6, remove the foil and cook for a further 20 minutes until sticky and delicious.
