Ingredients
- 4 salmon portions
- 8 tbsp breadcrumbs
- 1 onion, finely chopped
- 4 tbsp dill and parsley, chopped
- 4 tbsp olive oil
- salt & pepper
- salad or roasted vegetables
FOR THE TOPPING:
TO SERVE:
Method
- 1. Season fish with salt and pepper.
- 2. Mix ingredients for topping and spoon on to the fish.
- 3. Bake in a preheated oven at 200°C/ 400°F/gas mark 6 for 15 minutes or until fish is cooked through and the topping is golden brown.
- 4. Serve with salad or oven roasted vegetables.
