Tomato, Onion & Cheese Baked Egg Tortilla

Is it an omelette? Is it a quiche? These baked eggs are baked in a tortilla “crust” and can be enjoyed warm or cold, so perfect for breakfast, brunch or lunchboxes. Tomato and cheese is a classic combo, but you can try any additions you like.

Ingredients

  • 1 tortilla
  • 4 eggs
  • Salt & pepper
  • Handful cherry tomatoes, cut in halves
  • 2 scallions, sliced

Instructions

  1. Pre-heat oven to 180°C / 160°C fan assisted.
  2. Press the tortilla into a shallow pie dish then crack in the 4 eggs. Season with salt and pepper then scramble them.
  3. Add the tomatoes and scallion, then sprinkle over the grated cheese.
  4. Bake until the centre is set but it still has a very slight wobble, about 20 minutes.
  5. Leave to cool in the dish for about 5-10 minutes before cutting.
