Introduction

Start your day with these delicious baked oats that are tiramisu inspired. Lightly flavoured with a hint of espresso then topped with a cocoa-dusted yoghurt topping, serve up a slice for a delicious brekkie that’s tasty as well as satisfying. This can be enjoyed still-warm or cold.

Ingredients

  • 200g oats
  • 1 tsp baking powder
  • 2 very ripe bananas, mashed
  • 2 eggs, beaten
  • 150ml milk of choice
  • Double espresso
  • 2-3 tbsp honey or maple syrup
  • 75g dark chocolate chips
  • To top
  • 200g plain or vanilla yoghurt
  • Cocoa powder, for dusting

Method

  • 1. Pre-heat oven to 200°C / 180°C fan assisted.
  • 2. In a large baking dish (approx. 20x20cm / 8x8 inch) mix together the oats and baking powder.
  • 3. Add the remaining ingredients and mix to combine. Use the back of a large spoon or spatula to smooth the top of the mixture.
  • 4. Bake in the pre-heated oven for about 25 minutes (the surface should bounce back when lightly pressed, or a toothpick doesn’t come out wet.)
  • 5. Leave to cool for about 10 minutes then spread the yoghurt over the top. Dust with cocoa powder then cut into portions and serve.
